Easy Peasy Lemon Icebox Pie

I’m always looking for a great recipe for dessert that I don’t have to bake in the summer.  I mean who wants to turn on the oven when you could whip up a tasty treat and stick it in the fridge for a few hours and you are set? Yes, Please! With just a few ingredients, quick and easy lemon icebox pie is definitely a delicious way to beat the heat.  (If you are working on your summer bucket list, its also a great and easy item to bring to the BBQ)

Ingredients:

1 Graham Cracker Pie Crust

1 Cup Lemon Juice

2 Cans (14oz.) Evaporated milk 

Sugar to Taste

Here’s how to make it: 

To make the filling of the lemon icebox pie, combine the lemon juice and the evaporated milk until they are mixed together thoroughly.  Don’t worry if it looks really weird at first – it definitely does. Keep going and know that it will look beautiful and delicious in the end. If you are like me, you may want to add a little bit of sugar to cut the tartness.  (It is perfectly OK without the sugar – it is entirely up to you!) Pour the mixture into the pie crust and smooth out the top. Place in the fridge for a minimum of 2 – 3 hours to set.

How to make it FANCY:

Your lemon icebox pie is wonderful on its own, but if you want it to be a centerpiece of your dessert table you can easily add some simple touches to make it stunning.  Overall you want to use whipped cream as any type of base that you might use – beautiful and so so good! 

Berries – Pairing with strawberries, blueberries or any kind of berry is an easy choice that stands out in simplicity and appeal – and the flavors are so yummy!

Lemon or other citrus rind – You can’t go wrong with this choice.  Again using a base of whipped cream will allow your garnish on the pie to stand out. (Do not freeze with a rind – it simply will not hold up). 

Fresh Herbs or other Flowers – Yes, lavender, rosemary, lemon balm and even basil are wonderful touches as a garnish to this pie!
